- 2 cups self-rising flour
- 1/4 cup cold unsalted butter, cut into cubes
- 2 tablespoons granulated sugar
- 2/3 to 3/4 cup cold buttermilk
- 4 apples, peeled, cored, and diced
- 3–4 tablespoons lemon juice
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 large egg, beaten
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- Pinch of salt
- 1/2 cup powdered sugar
- 3 tablespoons heavy cream
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- For fresh apple filling, melt 2 tablespoons of butter in a skillet over medium heat.
- Add diced apples, lemon juice, sugar, vanilla extract, cinnamon, and nutmeg.
- Cook until apples are tender, about 5-7 minutes. Let cool.
- In a medium bowl, whisk flour and sugar.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Add 2/3 cup buttermilk, stirring until dough forms. Add more buttermilk if needed.
- Roll dough into a rectangle, about 1/2 inch thick.
- Spread cooked apples over half the dough, then fold the other half over.
- Cut into 12 squares and place on baking sheet.
- Mix cinnamon, sugar, and salt in a small bowl.
- Brush biscuits with beaten egg and sprinkle with cinnamon-sugar mixture.
- Bake for 12-14 minutes, or until golden brown.
- Whisk powdered sugar and heavy cream to make a glaze.
- Drizzle glaze over warm biscuits before serving.
Notes
For a shortcut, use canned apple pie filling instead of fresh apples.
