- ½ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 large egg whites
- ½ cup sour cream
- ¼ cup milk
- ¼ cup water
- 1 cup whole milk (for pastry cream)
- 1 egg yolk
- ¼ cup granulated sugar (for pastry cream)
- 1 tbsp cornstarch
- 1 tbsp salted butter
- 1 tsp vanilla extract (for pastry cream)
- 1 cup dark chocolate chips
- 1 tbsp light corn syrup
- ½ cup heavy cream
Instructions
- Preheat oven to 325°F (162°C) and line a muffin tin with cupcake liners.
- Whisk together flour, baking powder, and salt.
- Cream butter and sugar until light and fluffy. Add egg whites one at a time, followed by vanilla and sour cream.
- Alternate adding dry ingredients with milk and water, mixing until just combined.
- Divide batter among cupcake liners and bake for 15-20 minutes. Let cool completely.
- For pastry cream, heat milk in a saucepan until it simmers.
- Whisk egg yolk, sugar, and cornstarch. Slowly add hot milk while whisking, then return to heat and cook until thick.
- Stir in butter and vanilla, transfer to a bowl, cover, and chill for 2 hours.
- For ganache, heat heavy cream and pour over chocolate chips. Let sit, then stir until smooth. Add corn syrup and mix.
- Core the cupcakes and fill with pastry cream.
- Drizzle or spoon ganache over the top.
- Let ganache set before serving.
Notes
For a fun twist, add a touch of almond extract or orange zest to the cupcake batter.
