Ingredients

  • 1 lb ground chicken
  • 1 egg
  • ½ cup panko breadcrumbs (or almond flour for low-carb)
  • 2 tablespoons finely chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup buffalo-style hot sauce (like Frank’s RedHot)
  • 2 tablespoons unsalted butter (or vegan butter)
  • 1 teaspoon honey (optional)
  • Dash of garlic powder (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine ground chicken, egg, breadcrumbs, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until just combined.
  3. Form mixture into 1½-inch balls (about 18–20) and place on the prepared sheet.
  4. Bake for 18–20 minutes until golden and cooked through (or air fry at 375°F for 10–12 minutes, shaking halfway).
  5. In a small saucepan or microwave-safe bowl, combine hot sauce, butter, honey, and garlic powder. Heat until butter is melted and sauce is smooth.
  6. Toss cooked meatballs in the buffalo sauce until fully coated.

Notes

Serve with ranch or blue cheese dressing and celery sticks. Double the batch and freeze for easy future snacks!
