- 1 lb ground chicken
- 1 egg
- ½ cup panko breadcrumbs (or almond flour for low-carb)
- 2 tablespoons finely chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ⅓ cup buffalo-style hot sauce (like Frank’s RedHot)
- 2 tablespoons unsalted butter (or vegan butter)
- 1 teaspoon honey (optional)
- Dash of garlic powder (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine ground chicken, egg, breadcrumbs, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until just combined.
- Form mixture into 1½-inch balls (about 18–20) and place on the prepared sheet.
- Bake for 18–20 minutes until golden and cooked through (or air fry at 375°F for 10–12 minutes, shaking halfway).
- In a small saucepan or microwave-safe bowl, combine hot sauce, butter, honey, and garlic powder. Heat until butter is melted and sauce is smooth.
- Toss cooked meatballs in the buffalo sauce until fully coated.
Notes
Serve with ranch or blue cheese dressing and celery sticks. Double the batch and freeze for easy future snacks!
