Description

Caprese Stuffed Garlic Butter Portobellos combine the rich, earthy flavor of Portobello mushrooms with the fresh, vibrant taste of Caprese salad, all infused with a delicious garlic butter glaze. This dish makes a fantastic appetizer, side, or vegetarian main course.


Ingredients

  • 4 large Portobello mushrooms
  • 1 cup cherry tomatoes, diced
  • 1 cup fresh mozzarella, cubed
  • ¼ cup fresh basil, chopped
  • 2 tablespoons balsamic glaze (optional)
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Clean the Portobello mushrooms, remove stems, and gently scrape out the gills.
  3. In a small bowl, mix melted butter, minced garlic, salt, and black pepper.
  4. Brush the garlic butter mixture over the mushrooms and place them on the baking sheet.
  5. In another bowl, mix diced tomatoes, mozzarella, and fresh basil.
  6. Spoon the Caprese mixture into each mushroom cap, filling them generously.
  7. Bake for 20-25 minutes, or until the mushrooms are tender and the cheese is melted.
  8. Drizzle with balsamic glaze before serving, if desired.

Notes

For a vegan version, substitute mozzarella with plant-based cheese and use dairy-free butter.
