- 4 large Portobello mushrooms
- 1 cup cherry tomatoes, diced
- 1 cup fresh mozzarella, cubed
- ¼ cup fresh basil, chopped
- 2 tablespoons balsamic glaze (optional)
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Clean the Portobello mushrooms, remove stems, and gently scrape out the gills.
- In a small bowl, mix melted butter, minced garlic, salt, and black pepper.
- Brush the garlic butter mixture over the mushrooms and place them on the baking sheet.
- In another bowl, mix diced tomatoes, mozzarella, and fresh basil.
- Spoon the Caprese mixture into each mushroom cap, filling them generously.
- Bake for 20-25 minutes, or until the mushrooms are tender and the cheese is melted.
- Drizzle with balsamic glaze before serving, if desired.
Notes
For a vegan version, substitute mozzarella with plant-based cheese and use dairy-free butter.
