- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon sea salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in egg and vanilla extract until combined.
- In a separate bowl, whisk together flour, graham cracker crumbs, salt, baking soda, and baking powder.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Roll dough into balls and slightly flatten them on the baking sheet.
- Bake for 10-12 minutes until edges are golden brown. Let cool completely.
- In a mixing bowl, beat cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until fluffy.
- For the caramel drizzle, melt butter and brown sugar in a saucepan over medium heat, stirring until smooth.
- Slowly add heavy cream, stirring until thickened.
- Stir in vanilla extract and sea salt. Let cool.
- Spread cheesecake topping onto cooled cookies.
- Drizzle caramel over the cheesecake layer and sprinkle with sea salt.
- Chill cookies for at least 30 minutes before serving.
Notes
For added texture, sprinkle chopped pecans or walnuts on top of the caramel drizzle.
