Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in egg and vanilla extract until combined.
  4. In a separate bowl, whisk together flour, graham cracker crumbs, salt, baking soda, and baking powder.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Roll dough into balls and slightly flatten them on the baking sheet.
  7. Bake for 10-12 minutes until edges are golden brown. Let cool completely.
  8. In a mixing bowl, beat cream cheese until smooth.
  9. Add powdered sugar and vanilla extract, mixing until fluffy.
  10. For the caramel drizzle, melt butter and brown sugar in a saucepan over medium heat, stirring until smooth.
  11. Slowly add heavy cream, stirring until thickened.
  12. Stir in vanilla extract and sea salt. Let cool.
  13. Spread cheesecake topping onto cooled cookies.
  14. Drizzle caramel over the cheesecake layer and sprinkle with sea salt.
  15. Chill cookies for at least 30 minutes before serving.

Notes

For added texture, sprinkle chopped pecans or walnuts on top of the caramel drizzle.
