Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tbsp capers
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Pound the chicken breasts to an even 1/2-inch thickness.
  2. Season both sides with salt and pepper, then dredge lightly in flour, shaking off excess.
  3. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat.
  4. Sear the chicken for 3-4 minutes per side until golden and cooked through. Remove and set aside.
  5. Deglaze the pan with chicken broth, scraping up browned bits.
  6. Add lemon juice and capers, simmering for 2-3 minutes.
  7. Stir in the remaining butter and return the chicken to the pan, spooning sauce over it.
  8. Simmer for 2-3 minutes, garnish with parsley, and serve immediately.

Notes

For a less tangy sauce, reduce the lemon juice or add extra butter. Chicken thighs can be used instead of breasts for a juicier option.
