- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tbsp capers
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Pound the chicken breasts to an even 1/2-inch thickness.
- Season both sides with salt and pepper, then dredge lightly in flour, shaking off excess.
- Heat olive oil and 1 tbsp butter in a skillet over medium-high heat.
- Sear the chicken for 3-4 minutes per side until golden and cooked through. Remove and set aside.
- Deglaze the pan with chicken broth, scraping up browned bits.
- Add lemon juice and capers, simmering for 2-3 minutes.
- Stir in the remaining butter and return the chicken to the pan, spooning sauce over it.
- Simmer for 2-3 minutes, garnish with parsley, and serve immediately.
Notes
For a less tangy sauce, reduce the lemon juice or add extra butter. Chicken thighs can be used instead of breasts for a juicier option.
