A comforting and delicious Creamy Chicken & Rice Casserole that is perfect for family dinners and meal prep.
Ingredients

- 2 cups cooked white or brown rice
- 2 cups cooked, shredded chicken
- 1 can (10.5 oz) cream of chicken soup
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup frozen peas
- 1/2 cup diced carrots
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
Instructions
- Preheat oven to 350°F (175°C) and grease a casserole dish.
- In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, milk, half of the cheese, peas, carrots, garlic powder, salt, black pepper, and thyme.
- Mix until all ingredients are well combined.
- Transfer mixture to the prepared casserole dish and spread evenly.
- Sprinkle remaining cheese on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10-15 minutes, until cheese is melted and bubbly.
- Let cool for a few minutes before serving. Garnish with fresh parsley if desired.
Notes
For a healthier version, use low-fat cheese and replace cream of chicken soup with a homemade cream sauce.
