Description

These oven-baked Crispy Parmesan Garlic Zucchini Fries are a crunchy, savory, and healthy alternative to traditional fries—perfect as a snack or side.


Ingredients

  • 2 medium zucchini, ends trimmed
  • 1/2 cup grated parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 tsp dried Italian seasoning
  • Salt and pepper, to taste
  • Olive oil spray (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice zucchini in half crosswise, then into fry-sized sticks.
  3. In one bowl, beat the egg. In another, combine panko, parmesan, garlic, Italian seasoning, salt, and pepper.
  4. Dip each zucchini stick in egg, then coat in the panko mixture, pressing gently to adhere.
  5. Arrange in a single layer on baking sheet. Spray lightly with olive oil if desired.
  6. Bake for 20–25 minutes, flipping halfway, until golden and crispy. Or air fry at 400°F (200°C) for 10–12 minutes.

Notes

Pat zucchini dry before breading to avoid sogginess. Serve with marinara, ranch, or garlic aioli for dipping.
