These oven-baked Crispy Parmesan Garlic Zucchini Fries are a crunchy, savory, and healthy alternative to traditional fries—perfect as a snack or side.

- 2 medium zucchini, ends trimmed
- 1/2 cup grated parmesan cheese
- 1/2 cup panko breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1/2 tsp dried Italian seasoning
- Salt and pepper, to taste
- Olive oil spray (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice zucchini in half crosswise, then into fry-sized sticks.
- In one bowl, beat the egg. In another, combine panko, parmesan, garlic, Italian seasoning, salt, and pepper.
- Dip each zucchini stick in egg, then coat in the panko mixture, pressing gently to adhere.
- Arrange in a single layer on baking sheet. Spray lightly with olive oil if desired.
- Bake for 20–25 minutes, flipping halfway, until golden and crispy. Or air fry at 400°F (200°C) for 10–12 minutes.
Notes
Pat zucchini dry before breading to avoid sogginess. Serve with marinara, ranch, or garlic aioli for dipping.
