Description

A slow-cooked meatloaf infused with caramelized onions and topped with melted Swiss cheese, combining the best flavors of French onion soup with a classic comfort dish.

  • 2 lbs ground beef (80/20 blend)
  • 1 large yellow onion, thinly sliced
  • ½ cup breadcrumbs (or almond flour for a low-carb version)
  • ½ cup shredded Swiss or Gruyère cheese
  • 2 eggs
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup caramelized onions
  • ½ cup additional shredded Swiss cheese
  • 1 tbsp butter (for caramelizing onions)

Instructions

  1. Caramelize onions by heating butter in a pan over medium-low heat. Add sliced onions and cook slowly for about 25 minutes, stirring occasionally until golden brown.
  2. In a large bowl, mix ground beef, breadcrumbs, eggs, garlic powder, salt, pepper, half of the caramelized onions, and shredded cheese. Mix gently to avoid a dense texture.
  3. Shape the mixture into a loaf and place in the crockpot.
  4. Pour Worcestershire sauce and beef broth around the meatloaf.
  5. Cook on low for 6-7 hours or high for 3-4 hours, until the internal temperature reaches 160°F (71°C).
  6. With 15-20 minutes left, top with the remaining caramelized onions and Swiss cheese. Cover and let the cheese melt.
  7. Let the meatloaf rest for 5 minutes before slicing and serving.

Notes

For extra moisture, mix in a few tablespoons of milk. Use a meat thermometer to prevent overcooking. Serve with mashed potatoes, steamed green beans, or a warm baguette for a complete meal.
