- 2 lbs ground beef (80/20 blend)
- 1 large yellow onion, thinly sliced
- ½ cup breadcrumbs (or almond flour for a low-carb version)
- ½ cup shredded Swiss or Gruyère cheese
- 2 eggs
- ½ cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 1 cup caramelized onions
- ½ cup additional shredded Swiss cheese
- 1 tbsp butter (for caramelizing onions)
Instructions
- Caramelize onions by heating butter in a pan over medium-low heat. Add sliced onions and cook slowly for about 25 minutes, stirring occasionally until golden brown.
- In a large bowl, mix ground beef, breadcrumbs, eggs, garlic powder, salt, pepper, half of the caramelized onions, and shredded cheese. Mix gently to avoid a dense texture.
- Shape the mixture into a loaf and place in the crockpot.
- Pour Worcestershire sauce and beef broth around the meatloaf.
- Cook on low for 6-7 hours or high for 3-4 hours, until the internal temperature reaches 160°F (71°C).
- With 15-20 minutes left, top with the remaining caramelized onions and Swiss cheese. Cover and let the cheese melt.
- Let the meatloaf rest for 5 minutes before slicing and serving.
Notes
For extra moisture, mix in a few tablespoons of milk. Use a meat thermometer to prevent overcooking. Serve with mashed potatoes, steamed green beans, or a warm baguette for a complete meal.
