Crockpot French Onion Meatloaf

Description

A comforting and flavorful meatloaf slow-cooked with caramelized onions and topped with melted Swiss cheese for the perfect hearty meal.


Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 cup caramelized onions
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 6 slices Swiss cheese
  • 2 tbsp butter (for caramelizing onions)

Instructions

  1. Caramelize onions by cooking sliced onions in butter over low heat until golden brown, about 30-40 minutes.
  2. In a large bowl, mix ground beef, breadcrumbs, eggs, garlic powder, onion powder, black pepper, salt, and half of the caramelized onions.
  3. Shape into a loaf and place in the crockpot.
  4. Mix beef broth and Worcestershire sauce, then pour over the meatloaf.
  5. Cook on low for 4-5 hours or until internal temperature reaches 160°F (71°C).
  6. Top with Swiss cheese slices in the last 10 minutes of cooking, allowing them to melt.
  7. Let rest for 5-10 minutes before slicing and serving.

Notes

For extra flavor, use a mix of ground beef and pork. Serve with mashed potatoes or roasted vegetables for a complete meal.
