- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup melted butter
- 4 packs (8 oz each) cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate, melted
- 1/4 cup heavy cream (optional)
- 1 cup fresh strawberries, pureed
- 1/4 cup granulated sugar
- 1 tsp lemon juice
Instructions
- Preheat oven to 325°F (163°C). Grease a springform pan.
- Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake for 8-10 minutes. Cool.
- In a bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla, mixing until fluffy.
- Add eggs one at a time, mixing well after each addition, followed by heavy cream.
- Divide batter in two. Mix melted chocolate into one portion and pureed strawberries, sugar, and lemon juice into the other.
- Pour chocolate batter into crust, then add spoonfuls of strawberry batter on top. Swirl with a knife.
- Bake for 55-60 minutes, until center is slightly wobbly.
- Turn off oven, leave cheesecake inside with the door cracked for an hour. Refrigerate at least 4 hours before serving.
Notes
For best results, chill overnight. Garnish with fresh strawberries and chocolate drizzle before serving.
