  • ¾ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ tsp salt
  • ½ tsp baking powder
  • ½ cup dark chocolate chips or chunks (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, letting the edges overhang for easy lifting.
  2. In a medium saucepan or microwave-safe bowl, melt the butter. Remove from heat and stir in both sugars. Whisk until glossy and smooth.
  3. Whisk in the eggs, one at a time, then stir in vanilla. Mix until well incorporated.
  4. Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined. Fold in chocolate chips or chunks if using.
  5. Pour the batter into your prepared pan. Bake for 25–30 minutes, or until the center is just set but still soft. A toothpick should come out with moist crumbs.
  6. Let brownies cool in the pan for at least 30 minutes before slicing.

Notes

For extra depth, try Dutch-process cocoa. Slightly underbaking and using both brown and white sugar ensures a fudgy center and crackly top.
