- 1.5 lbs ground chicken
- ½ cup grated Parmesan cheese
- ¾ cup breadcrumbs (or almond flour for low-carb version)
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- Optional: ¼ cup chopped parsley, ½ tsp red pepper flakes, ½ cup shredded mozzarella
Instructions
- Preheat oven to 375°F (190°C) and grease a loaf pan.
- In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently.
- Transfer the mixture to the loaf pan and shape evenly.
- Sprinkle extra Parmesan on top for a golden crust.
- Bake for 35-40 minutes, or until internal temperature reaches 165°F (74°C).
- For a crispy top, broil for 2-3 minutes at the end.
- Let rest for 5 minutes before slicing and serving.
Notes
For a keto-friendly version, swap breadcrumbs for almond flour. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
