Description

A delicious, healthier take on classic meatloaf, this Garlic Parmesan Chicken Meatloaf is packed with flavor, protein, and cheesy goodness while staying light and nutritious.


Ingredients

  • 1.5 lbs ground chicken
  • ½ cup grated Parmesan cheese
  • ¾ cup breadcrumbs (or almond flour for low-carb version)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: ¼ cup chopped parsley, ½ tsp red pepper flakes, ½ cup shredded mozzarella

Instructions

  1. Preheat oven to 375°F (190°C) and grease a loaf pan.
  2. In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently.
  3. Transfer the mixture to the loaf pan and shape evenly.
  4. Sprinkle extra Parmesan on top for a golden crust.
  5. Bake for 35-40 minutes, or until internal temperature reaches 165°F (74°C).
  6. For a crispy top, broil for 2-3 minutes at the end.
  7. Let rest for 5 minutes before slicing and serving.
