A quick and delicious take on classic pecan pie, these Lazy Girl Pecan Pie Bars are easy to make and full of rich, nutty flavor.

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 cup butter, melted
- 1/4 teaspoon salt
- 3 eggs
- 1 cup light corn syrup
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 2 cups chopped pecans
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, mix flour, sugar, and salt.
- Cut in melted butter until mixture forms a crumbly dough.
- Press the crust mixture into the bottom of a greased 9×13-inch pan.
- Bake crust for 10 minutes until lightly golden.
- In a large bowl, whisk eggs, corn syrup, granulated sugar, brown sugar, and melted butter.
- Stir in vanilla extract and chopped pecans.
- Pour filling over the pre-baked crust and spread evenly.
- Bake for 25-30 minutes, until filling is set and golden brown.
- Let cool completely before cutting into squares.
Notes
For extra flavor, try adding a drizzle of caramel or a scoop of vanilla ice cream when serving.
