Description

A delicious and healthy Lemon Ginger Chicken, packed with vibrant flavors from fresh lemon and ginger, perfect for any meal.


Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • Juice and zest of 1 lemon
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • 1 tbsp soy sauce or tamari
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a bowl, mix lemon juice, lemon zest, ginger, olive oil, soy sauce, honey, salt, and pepper.
  2. Place the chicken in the marinade and let it sit for at least 30 minutes, or overnight for maximum flavor.
  3. For grilling: Preheat the grill to medium-high heat and cook the chicken for 6-8 minutes per side until the internal temperature reaches 165°F (75°C).
  4. For baking: Preheat the oven to 375°F (190°C), place the chicken on a lined baking sheet, and bake for 20-25 minutes.
  5. For stovetop: Heat a skillet over medium heat, add oil, cook chicken for 5-7 minutes per side, then add remaining marinade and let it reduce to create a glaze.
  6. Serve hot with your favorite sides.

Notes

For extra flavor, marinate overnight. Adjust spice level by adding red chili flakes or hot sauce to the marinade. Serve with rice, roasted vegetables, or sautéed greens.
