Description

A rich and comforting Monterey Chicken Spaghetti casserole made with creamy sauce, shredded chicken, Monterey Jack cheese, and a crispy topping. Perfect for family dinners and easy meal prep.


Ingredients

  • 2 cups cooked, shredded chicken
  • 8 oz spaghetti, cooked and drained
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1 cup fresh or frozen spinach, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup French fried onions

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix shredded chicken, cream of chicken soup, sour cream, half of the cheese, spinach, and seasonings until well combined.
  3. Spread cooked spaghetti in the bottom of a greased baking dish.
  4. Pour the chicken mixture over the pasta, spreading evenly.
  5. Top with remaining cheese and French fried onions.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
  7. Let rest for 5 minutes before serving.

Notes

For a spicy kick, add diced jalapeños or substitute Pepper Jack cheese.
