Description

  • Crust:
  • 1 ½ cups graham cracker crumbs (or cookie crumbs like Oreos)
  • ¼ cup melted butter
  • 2 tbsp granulated sugar
  • Cheesecake Filling:
  • 3 packs (8 oz each) cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • Salted Caramel Sauce:
  • 1 cup heavy cream
  • 1 cup brown sugar
  • 4 tbsp unsalted butter
  • 1 tsp sea salt

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a greased 9-inch springform pan. Bake for 10-12 minutes until golden brown. Cool completely.
  2. In a large bowl, beat cream cheese until smooth. Add sour cream, sugar, and vanilla extract, mixing until well combined. Beat in eggs one at a time, ensuring a smooth batter. Pour onto the cooled crust and smooth the top.
  3. To prepare the salted caramel sauce, combine heavy cream, brown sugar, and butter in a saucepan over medium heat. Stir until the mixture simmers and thickens (about 5 minutes). Remove from heat and stir in sea salt. Allow to cool slightly.
  4. Drizzle the caramel sauce over the cheesecake filling and gently swirl it with a knife. Bake the cheesecake for 45-50 minutes, or until edges are set and the center jiggles slightly. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  5. Serve with additional salted caramel sauce drizzled on top. Enjoy!

Notes

For a gluten-free version, substitute the graham cracker crumbs with gluten-free cookie crumbs. To prevent cracks, bake the cheesecake in a water bath, and let it cool gradually.
