Description

Discover how to make tender, flavorful spicy Korean BBQ short ribs with authentic ingredients, easy preparation, and serving tips.

Ingredients

  • Beef Short Ribs
    • Opt for bone-in short ribs, known for their rich, meaty flavor.
    • LA-style ribs (thinly sliced across the bone) are perfect for quick grilling.
  • Marinade Base
    • Soy sauce: Adds salty, umami depth.
    • Gochujang: The backbone of spiciness with its smoky, fermented profile.
    • Gochugaru (red pepper flakes): Enhances heat and color.
    • Garlic and ginger: Provide aromatic balance.
    • Korean pear juice: Naturally tenderizes meat while adding subtle sweetness.

Optional Ingredients

  • Sesame oil: For a nutty finish.
  • Rice wine: To balance the marinade’s acidity.
  • Honey or sugar: Enhances caramelization during grilling.

Instructions

Step 1: Prepare the Marinade

  1. Combine the following in a mixing bowl:
    • 1/2 cup soy sauce.
    • 2 tablespoons gochujang.
    • 1 tablespoon gochugaru.
    • 2 minced garlic cloves and 1 tablespoon grated ginger.
    • 2 tablespoons Korean pear juice or grated Asian pear.
    • 1 tablespoon sesame oil and 1 tablespoon honey.
  2. Mix until fully combined. Adjust sweetness or heat to taste.

Step 2: Marinate the Ribs

  • Place your short ribs in a resealable plastic bag or shallow dish.
  • Pour the marinade over the ribs, ensuring each piece is evenly coated.
  • Refrigerate for at least 4 hours or, ideally, overnight.

Step 3: Grill or Cook

  • Grilling:
    • Preheat a charcoal or gas grill to medium-high heat.
    • Cook ribs for 4–6 minutes per side until caramelized and slightly charred.
  • Oven Method:
    • Broil the ribs on high for 3–4 minutes per side.
