- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup chopped cooked spinach (well drained)
- 2 tablespoons cream cheese
- 1 garlic clove, minced (or ¼ tsp garlic powder)
- Optional: 1–2 tbsp sour cream
- Optional: red pepper flakes or black pepper
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, mix spinach, cream cheese, mozzarella, Parmesan, garlic, and any optional ingredients until well combined.
- Scoop 1 to 1.5 tablespoon portions onto the baking sheet, spacing them 1–2 inches apart. Flatten slightly with a spoon.
- Bake for 10–12 minutes, or until edges are deep golden brown. Watch closely after 10 minutes.
- Let cool on the sheet for at least 5 minutes before removing. They’ll crisp as they cool.
Notes
Be sure to squeeze all moisture from spinach for maximum crispiness. Use parchment or silicone to prevent sticking. Store in an airtight container for up to 3 days or refrigerate for up to a week.
