- 2 cups self-rising flour
- 1 cup sugar
- 2 eggs
- 1/2 cup vegetable or canola oil
- 1 tsp vanilla extract
- 1 cup chopped pecans
- 1/2 cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, beat the eggs and sugar until smooth. Add the oil and vanilla extract and mix well.
- Gradually add the self-rising flour and milk, stirring until just combined.
- Fold in the chopped pecans until evenly distributed.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a warm spice flavor, add 1 tsp cinnamon. Substitute pecans with walnuts or almonds if desired.
